On Avgolemono Greek Lemon Chicken Soup:
This recipe is perfect for Winter- it’s rich and creamy and incorporates in season citrus. There’s also no dairy products which is notable and it is so bright in flavor thanks to the lemons- so uplifting!

AVGOLEMONO GREEK EGG & LEMON SOUP
Ingredients:
- 2 Quarts Chicken Broth
- 1 Cup Orzo
- 3 Stalks Celery, chopped
- 1 Large Onion, chopped
- 1/4 Cup Vegetable Oil
- 1 lb Chicken Breast, cut in large bite-sized pieces
- 4 Large Eggs
- *3-5 Lemons (⅓ cup juice)
Preparation:
Sauté onion & celery in vegetable oil until tender, approximately 10 minutes.
Add soup stock and bring to a boil.
Turn heat down to medium and add orzo.
Cook for about 6 minutes and add chicken.
Beat eggs until light and fluffy in a 1-2 quart bowl.
When chicken and orzo are almost done, begin removing some broth and slowly adding to the eggs.
Beat the broth/egg mixture and continue to add more broth to slowly bring the temperature of the eggs up so that when you pour them into the soup, it doesn’t curdle.
Add the lemon juice to the egg/broth mixture and slowly pour back into the pot, stirring constantly, then add salt & pepper to taste.
*Lemons vary quite a bit in juiciness. Although Meyer lemons are very juicy, I find that regular lemons provide the right level of acidity for this soup.

A Dutch Baby is actually a giant baked pancake, very simple and always impressive: puffed-up, golden and delicious! We always make them on Christmas morning and invite our neighbors over for brunch and a little gift exchange.
This recipe is very flexible, just follow the chart below for the pan size (cast iron) and all the ingredients.

My family started adding this Fresh Cranberry Relish to our Thanksgiving dinner as it adds a welcome brightness to the whole meal and is ridiculously easy. It’s best to make it the day before so the flavors can blend. It’s also great on a sandwich with leftover turkey!

About Panzanella:
This is a recipe I make in late summer, when real vine-ripened tomatoes are available. Besides ripe tomatoes, it is important to use a sturdy, dense bread, such as a rustic Artisan or sourdough (white or wheat), ideally from your local bakery. Day-old dense bread is fine for this. Be generous with the basil.
What to do with the leftovers? Combine a cup or two of the bread salad with a couple of beaten eggs for a delicious breakfast omelet the next morning.

About Tabbouleh:
We always make tabbouleh when real vine-ripened tomatoes and fresh garden cucumbers are in season, so late summer is the perfect time to enjoy this refreshing salad. Traditional Middle Eastern tabbouleh is made with a huge amount of parsley, and very little grain, but I prefer a lot more grain (bulgur wheat or quinoa) and a good amount, but not overwhelming parsley.

About Wacky Cake:
Wacky cake is something that is quick and can be made with most common of ingredients in the pantry. This recipe comes out of the Great Depression, in the mid-1930’s when butter, eggs and milk were out of reach of most people’s budgets. It is very reminiscent of recipes I discovered while researching my cookbook, Comida Cubana and reminds me of the recipes of TV cooking show personality, Nitza Villapol. She is in many ways, the Cuban Julia Child, who taught a nation to cook at home. In Cuba, after the revolution of 1959, Villapol became famous for creatively doing more with less. Virtually every Cuban home I visited had a cherished copy of her cookbook, Cocina al Minuto. Read more about Nitza in this excerpt from Comida Cubana.
