At a restaurant, one used to simply order a dozen oysters. But these days, raw bars include menus of dozens of different oysters to choose from. Kumamotos are prized on the West Coast, Wellfleets are beloved in New England, New Yorkers love their Blue Points. There are however, just five species of oysters harvested in the U.S.; all other differences come from where they mature, and the waters they filter.
There are technically five types of oysters in the world. Here they all are:
Crassostrea Gigas–Pacific Oyster
Crassostrea Sikamea–Kumamoto Oyster
Crassostrea Virginicas–Atlantic Oyster
Ostrea Edulis–European Flat
Ostrea Lurida–Olympia Oysters

The Aviation cocktail was created in 1916 by Hugo Ensslin, the head bartender at the Hotel Wallick in New York City, and first published in his cocktail book Recipes for Mixed Drinks. The drink is a variation on the Gin Sour that's shaken and served straight up. It's known for its distinctive color and floral flavor, which come from the addition of crème de violette, a violet liqueur.
The Last Word is a Prohibition-era cocktail that got its beginnings in the Detroit Athletic Club's bar in the early 1920s. It contains: 1 part gin, 1 part Green Chartreuse, 1 part lime juice, 1 part Maraschino liqueur.

The steelhead is a type of rainbow trout, native to the Pacific ocean, Asia and parts of North America. Steelhead are born in freshwater, migrates to the ocean for adulthood and returns to freshwater to reproduce. A favorite of fly fishermen.
