At a restaurant, one used to simply order a dozen oysters. But these days, raw bars include menus of dozens of different oysters to choose from. Kumamotos are prized on the West Coast, Wellfleets are beloved in New England, New Yorkers love their Blue Points. There are however, just five species of oysters harvested in the U.S.; all other differences come from where they mature, and the waters they filter.

There are technically five types of oysters in the world.  Here they all are: 

Crassostrea Gigas–Pacific Oyster

Crassostrea Sikamea–Kumamoto Oyster

Crassostrea Virginicas–Atlantic Oyster

Ostrea Edulis–European Flat

Ostrea Lurida–Olympia Oysters
